Being a baker in the Southwest poses a few problems. It is ironic that just when we are blessed with wonderfully abundant ripe fruits and berries, the weather makes it almost impossible to consider turning on the oven to bake a pie. I know, there are tons of no-bake recipes out there but my favorites are from-scratch, baked fruit pies and tarts. I try to reduce the amount of time the oven has to be on. Today I am making my favorite quick bake pie. It is also the world's simplest pie recipe: Key Lime Pie. It will be in the oven for 15 minutes! Once cooled, I will top it with some beautiful fresh raspberries! I will post a photo when it is ready. I also resort to making hand pies when I must have a baked fruit pie - less time in the oven.
