1 # boneless pork (It could be from the shoulder or loin) I use the least expensive, bulk pack boneless pork I can find. Check the photos for information about grinding the meat and vegetables at home.
2 bunches of scallions, white only (reserve the tops)
2 inch section of fresh ginger
2 - 3 cloves of garlic
4- 5 oz. silken tofu
2 oz. Shao Hsing wine (dry sherry is a good substitute)
2 oz. low sodium Soy Sauce
2 1/2 tsp. salt
1 tsp black pepper
3 Tbsp cornstarch
1/2 tsp toasted sesame oil
1 - 2 packages of round gyoza wrappers. I have a large international supermarket in my neighborhood which is a wonderful resource. You can use wonton wrappers if you do not have the same shopping opportunities. Try to find the thinnest wrappers you can. I find the Thai and Vietnamese products tend to be the thinnest.
